As far as I know, buying a gift card from Ibotta still counts towards bonuses. However, if you withdraw to a gift card, these don't count toward bonuses.
I made a purchase of a gift card last night and it counted toward the Weekend Bonus.
I would suggest clearing the cache for the Ibotta app and checking again. Sometimes the numbers don't get updated right away.
